Ingredients

  • 4 slices whole grain bread

  • Salt and pepper to taste

Method

  • Preheat a non-stick pan over medium heat and add olive oil.
  • Once the oil is heated, add sliced mushrooms and sauté until they are golden and tender, about 5 minutes.
  • In a small bowl, whisk the eggs with a pinch of salt, pepper, and the teaspoon of Dijon mustard.
  • Pour the egg mixture into the pan with the mushrooms, stirring gently to create a soft scramble.
  • Toast the slices of whole grain bread until they are crisp and golden.
  • Once the eggs are cooked to your preference, remove the pan from heat.
  • Arrange the toasts on a serving plate, and top with the scrambled egg and mushroom mixture.
