- Gently fold the egg yolk mixture into the mascarpone cheese until well combined.
- In a clean bowl, whisk the egg whites with salt until stiff peaks form. Gradually fold the egg whites into the mascarpone mixture, being careful not to deflate the mixture.
- Quickly dip each ladyfinger into the espresso mixture, ensuring they are not soaked for too long to avoid them becoming soggy.
- In two dessert glasses or a small serving dish, layer the dipped ladyfingers and mascarpone mixture, starting with ladyfingers and ending with a layer of mascarpone.
- Cover and refrigerate for at least 2 hours or until set.
- Just before serving, sift the cocoa powder over the top for a finishing touch.
