Ingredients

  • 400 grams lamb, cubed
  • 200 grams basmati rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 200 grams tomatoes, chopped
  • 1 teaspoon cumin
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1 teaspoon chili pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 30 ml olive oil
  • 2 tablespoons parsley, chopped
  • 2 tablespoons coriander, chopped
  • 200 ml water

Method

  • In a large pot, heat olive oil over medium heat. Add the lamb and brown on all sides.
  • Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
  • Stir in the chopped tomatoes, cumin, cardamom, cinnamon, chili pepper, salt, and black pepper. Cook for 5 minutes.
  • Add the basmati rice to the pot, stirring to coat the rice with the spices and juices.
  • Pour in the water, bringing the mixture to a gentle simmer. Cover and cook for 30 minutes, or until the rice is tender and the lamb is cooked through.
  • Finish by stirring in the chopped parsley and coriander, then serve immediately.
