Ingredients

  • 200 grams of Corn
  • 200 grams of Dried Beans
  • 2 medium Tomatoes, chopped
  • 1 medium Onion, chopped
  • 2 cloves of Garlic, minced
  • 30 ml of Palm Oil
  • 1 Chili Pepper, chopped
  • Salt, to taste
  • Black Pepper, to taste
  • 5 grams of Dried Thyme
  • 5 grams of Dried Parsley
  • 200 ml of Water

Method

  • Rinse the dried beans and soak them in 200 ml of water for at least 1 hour.
  • In a large pan, heat the palm oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  • Stir in the chopped tomatoes and chopped chili pepper, cooking for another 5 minutes.
  • Mix in the soaked beans with the water and add the corn. Season with salt, pepper, dried thyme, and dried parsley.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes, or until the beans are tender, stirring occasionally.
  • Adjust the seasoning with salt and pepper to taste before serving.
