Ingredients

  • 800 grams Chicken Drumsticks
  • 100 grams Niter Kibbeh
  • 2 large Onions, finely chopped
  • 4 cloves of Garlic, minced
  • 2 cm piece of Ginger, grated
  • 2 tablespoons Tomato Paste
  • 4 boiled Eggs, peeled
  • 4 tablespoons Fresh Basil, chopped
  • 1 teaspoon Fenugreek
  • 1 teaspoon Chili Powder
  • Salt, to taste
  • Black Pepper, to taste
  • 600 ml Water
  • 4 large pieces of Ethiopian Flatbread

Method

  • Heat the niter kibbeh in a large pot until it melts and starts to boil. Add the chopped onions and sauté until transparent.
  • Stir in the minced garlic and grated ginger, sautéing until aromatic.
  • Add the chicken drumsticks and sear on all sides until golden brown.
  • Stir in the tomato paste and then add the chili powder, fenugreek, salt, and pepper. Mix well to coat the chicken.
  • Pour in the water and bring to a boil. Reduce the heat to a simmer and cover the pot. Let it cook until the chicken is tender, about 1.5 hours.
  • Add the boiled eggs and chopped basil in the last 10 minutes of cooking.
  • Serve the stew with Ethiopian flatbread, allowing the bread to soak up the rich sauce.
