Ingredients

  • 400 grams of Chicken, skinless and boneless
  • 100 ml Palm oil
  • 3 cloves of Garlic, minced
  • 1 Onion, finely chopped
  • 2 Tomatoes, chopped
  • 100 grams of Okra, sliced
  • 1 Chili pepper, deseeded and chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 Bay Leaves
  • 1 teaspoon Ginger (Ground)
  • 100 ml Chicken Stock

Method

  • Heat 50 ml of the palm oil in a large pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  • Stir in the chopped tomatoes, chili pepper, and sliced okra. Cook for about 5 minutes until the tomatoes have softened.
  • Add the remaining palm oil, ground ginger, and bay leaves, and let the ingredients simmer to enhance the flavors.
  • Add the chicken to the pan, stirring to coat in the aromatic mixture. Cook until the chicken is browned on all sides.
  • Pour in the chicken stock, and season with salt and black pepper. Bring to a boil, then reduce to a simmer and cover, cooking for about 30 minutes until the chicken is tender.
  • Once the chicken is cooked, remove the bay leaves, and adjust the seasoning to taste with salt and pepper.
  • Serve the Gabonese chicken dish hot, with a side of steamed white or brown rice to soak up the rich, flavorful sauce.
