Ingredients
- 200 grams of Jasmine Rice
- 200 grams of Chicken, boneless and skinless
- 2 Tomatoes, chopped
- 50 grams of Tomato Paste
- 1 Onion, chopped
- 1 Bell Pepper, chopped
- 2 cloves of Garlic, minced
- 1 tablespoon of grated Ginger
- 2 tablespoons of Vegetable Oil
- 1 teaspoon of Salt
- 1 teaspoon of Black Pepper
- 1 teaspoon of Thyme
- 1 tablespoon of Soy Sauce
Method
- Begin by marinating the chicken with 1 tablespoon of soy sauce, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of thyme. Set aside to marinate for 15 minutes.
- In a large pot, heat 1 tablespoon of vegetable oil and sauté the chopped onions, minced garlic, and grated ginger until fragrant.
- Add the chopped tomatoes, bell pepper, and tomato paste, stirring to combine. Cook for 5 minutes until the sauce thickens.
- Add the Jasmine Rice to the pot, stirring to coat the rice with the tomato mixture. Slowly add water until the rice is just covered. Season with the remaining salt, black pepper, and thyme. Cover and simmer for 20 minutes, or until the rice is cooked and the water is absorbed.
- In a separate pan, heat the remaining vegetable oil and grill the marinated chicken until cooked through and golden brown. This should take about 5 minutes on each side.
- Once the rice is cooked, fluff with a fork and serve alongside the grilled chicken.
Tips
- For a smoky flavor, add a pinch of smoked paprika to the rice.
- For a richer taste, use chicken broth instead of water to cook the rice.
