Ingredients

  • 300 grams of prawns, shelled and deveined
  • 150 grams of couscous
  • 200 grams of pineapple, diced
  • 2 tablespoons of rum
  • 100 grams of bok choy, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of thyme
  • 1 teaspoon of paprika
  • Salt to taste
  • Pepper to taste

Method

  • Begin by marinating the prawns with rum, thyme, paprika, salt, and pepper for 30 minutes.
  • In a medium saucepan, bring 300 ml of water to a boil. Add a pinch of salt and 1 tablespoon of olive oil.
  • Stir in the couscous, cover the saucepan, and remove it from the heat. Let it sit for 5 minutes, then fluff it with a fork.
  • In a large skillet, heat the remaining olive oil over medium heat. Add the marinated prawns and cook for 2-3 minutes on each side until they are pink and opaque.
  • Remove the prawns from the skillet, and in the same skillet, add the diced pineapple. Sauté for 5 minutes until they are caramelized.
  • In the same skillet, add the chopped bok choy and cook for 3 minutes until it is wilted and tender.
  • Return the prawns to the skillet and toss everything together until well combined.
  • Serve the prawns and pineapple over a bed of couscous. Enjoy your Ghanaian-inspired meal.

Tips

  • For a touch of spice, add a pinch of chili flakes to the prawns while marinating.
  • Garnish with fresh coriander for an added burst of freshness.
  • For a smokier flavor, grill the pineapple before adding it to the skillet.
