Ingredients

  • 200 grams of smoked ham, thinly sliced
  • 100 grams of Gouda, sliced
  • 2 tablespoons of dijon mustard
  • 4 pieces of whole grain bread, approximately 50 grams each
  • 50 grams of pickles, sliced
  • 200 grams of shrimp, peeled and deveined
  • 2 cloves of garlic, minced
  • 50 grams of butter
  • 1 lemon, zested and juiced
  • 2 tablespoons of chopped parsley
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons of olive oil

Method

  • Preheat a skillet over medium heat. Add olive oil to the skillet and toast the whole grain bread slices until golden and crispy, approximately 2 minutes per side. Set aside.
  • Spread a thin layer of dijon mustard on each slice of toast. Top two slices with smoked ham, followed by Gouda slices, and finally the pickles. Close the sandwiches with the remaining two slices of toast.
  • Heat the skillet over medium heat and toast the sandwiches until the Gouda melts and the sandwiches are golden on both sides, approximately 3 minutes per side. Set aside and keep warm.
  • In the same skillet, add the butter and minced garlic. Sauté until the garlic becomes fragrant, around 1 minute.
  • Add the shrimp to the skillet and cook until they turn pink and opaque, approximately 3-4 minutes. Stir in the lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste.
  • Divide the sandwiches and garlic shrimp between two plates. Serve the shrimp with the remaining lemon butter sauce drizzled on top.

Tips

To ensure the sandwiches are warm and the cheese is melting, you can tent them with aluminum foil while preparing the shrimp. This will keep the sandwiches delightfully warm and the cheese perfectly gooey.
