Serves: 2, Difficulty: Intermediate

Ingredients

  • 4 chicken thighs (approximately 400 grams)
  • 200 grams orzo
  • 2 eggs
  • 1 lemon
  • 500 ml chicken broth
  • 1 onion (approximately 150 grams)
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano

Method

  • Heat the olive oil in a large saucepan over medium heat. Add the chicken thighs and sear until golden brown, about 5 minutes on each side. Remove the chicken and set aside.
  • Finely chop the onion and add to the same saucepan. Sauté until the onion is translucent, about 5 minutes.
  • Stir in the orzo and cook for 2 minutes until slightly toasted. Add the chicken broth and bring to a boil.
  • Return the chicken thighs to the saucepan. Add salt, pepper, and oregano. Reduce the heat, cover, and simmer for 20 minutes or until the chicken is cooked through and the orzo is tender.
  • In a small bowl, whisk the eggs and lemon juice together until well combined.
  • Slowly add a ladle of the hot broth to the egg-lemon mixture, whisking continuously to temper the eggs.
  • Gradually add the egg-lemon mixture to the saucepan, stirring gently to combine. Continue to cook for 2 minutes until the sauce is creamy and slightly thickened.
  • Stir in the fresh dill and cook for another minute.
  • Serve the chicken and orzo hot, garnished with extra dill if desired.

Tips

  • To ensure a perfectly creamy avgolemono sauce, temper the eggs slowly and whisk continuously.
  • Adjust the lemon juice to taste, depending on your preference for tanginess.
  • For extra flavor, marinate the chicken thighs in a mixture of olive oil, lemon juice, and oregano for 1 hour before cooking.
