Serves: 2, Difficulty: Easy

Preparation time: 15 minutes, Cooking time: 25 minutes

Ingredients

  • 400 grams of potatoes, peeled and quartered
  • 200 grams of kale, finely chopped
  • 200 grams of smoked sausage (rookworst), sliced
  • 30 grams of butter
  • 100 milliliters of milk
  • Salt, to taste
  • Pepper, to taste
  • 5 grams of Dijon mustard
  • 5 grams of parsley, chopped

Method

  • In a large pot, bring water to a boil and add a pinch of salt. Boil the potatoes until tender, for about 15 minutes.
  • In a separate pot, steam the kale until it is wilted, about 5 minutes, and set aside.
  • Drain the potatoes and return them to the pot. Add the butter and milk, and mash until smooth and creamy.
  • Incorporate the kale into the mashed potatoes, seasoning the mixture with salt and pepper to taste.
  • In a skillet, lightly brown the slices of rookworst for about 5 minutes.
  • Mix the Dijon mustard into the mashed potatoes and kale, and gently fold in the rookworst slices.
  • Transfer to a serving dish and garnish with chopped parsley for a fresh, aromatic finish.

Tips

For a smoother texture, ensure the potatoes are thoroughly mashed. You can adjust the seasoning to your preference, and for a richer flavor, consider lightly browning the butter before mashing.
