Ingredients

  • 400 grams of Beef
  • 100 grams of Onion, chopped
  • 100 grams of Carrots, sliced
  • 100 grams of Celery, chopped
  • 50 ml of Red wine vinegar
  • 100 ml of Red wine
  • 2 Bay leaves
  • 2 Cloves
  • 4 Juniper berries, crushed
  • 5 grams of Ginger, sliced
  • 10 grams of Sugar
  • 10 grams of Salt
  • 5 grams of Black pepper
  • 20 ml of Vegetable oil

Method

  • In a large pot, heat the vegetable oil over medium heat and brown the beef on all sides. Set the beef aside.
  • In the same pot, add the chopped onion, carrots, and celery, and sauté until the onion is translucent.
  • Deglaze the pot with the red wine vinegar and red wine, scraping any browned bits from the bottom.
  • Return the beef to the pot and add the bay leaves, cloves, juniper berries, and sliced ginger.
  • Stir in the sugar, salt, and pepper. Pour in enough water to just cover the ingredients.
  • Bring to a boil, cover with a lid, and reduce the heat to low. Let it simmer for 2 hours, stirring occasionally.
  • Check the beef for tenderness. If it is not tender enough, continue to simmer until the beef is fall-apart tender.
