- 4 Eggs
- 60 ml Olive Oil
- 1 small Onion, thinly sliced (optional)

- 1 teaspoon Fresh Thyme (optional)
Method
- In a medium-sized, non-stick frying pan, heat 45 ml of olive oil over medium heat. Add the thinly sliced potatoes and onion (if using). Sprinkle with salt and gently cook for 15 minutes, stirring occasionally until the potatoes are tender. Ensure the potatoes are soft but not browned.
- In a large bowl, beat the eggs and season with a bit of salt. Add the cooked potatoes and onion to the eggs, stirring gently to coat.
- In the same frying pan, heat the remaining 15 ml of olive oil over medium heat. Pour the egg and potato mixture into the pan, spreading it evenly.
- Cook on a medium heat for 5 minutes, shaking the pan occasionally to prevent sticking, until the edges are set but the center is still a bit runny.
- Carefully place a flat, large plate over the pan and, with a swift motion, invert the tortilla onto the plate. Slide the tortilla back into the pan, cooked side up.
