Serves: 2, Difficulty: Expert

Preparation time: 30 minutes

Cooking time: 2 hours

Ingredients

  • 500 grams beef, diced
  • 2 onions, finely chopped
  • 3 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 tomatoes, chopped
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon caraway seeds
  • 2 bay leaves
  • Salt and black pepper to taste
  • 30 ml vegetable oil
  • 500 ml beef stock
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon vinegar
  • 1 teaspoon paprika

Method

  • Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, sautéing until they are translucent.
  • Add the beef, browning each piece on all sides.
  • Stir in the sweet paprika, cumin, caraway seeds, bay leaves, paprika, and a pinch of salt and pepper. Mix until the beef is fully coated with the spices.
  • Add the carrots, potatoes, and tomatoes into the pot. Stir to combine all the ingredients.
  • Pour in the beef stock and a teaspoon of vinegar, then bring the mixture to a boil. Once it’s boiling, reduce the heat and cover the pot. Let it simmer for approximately 1.5 hours or until the beef is tender and the vegetables are cooked.
  • Adjust the seasoning with salt and pepper, garnish with fresh parsley, and serve hot.

Tips

  • For a deeper flavor, allow the beef to marinate in the spices for a few hours before cooking.
  • Use a mixture of sweet and hot paprika for a bit of a heat kick.
  • For an authentic taste, serve with a side of bread or Hungarian nokedli (dumplings).
