Ingredients

  • 1 sweet potato, diced into 1 cm cubes

  • 100 grams green beans, trimmed and cut into 2 cm pieces
  • 1 green chilli, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons chopped fresh coriander for garnish

Method

  • Heat the olive oil in a large pan over medium heat.
  • Add the cumin seeds and toast for 1 minute or until fragrant.
  • Add the sliced onions and green chilli, and sauté until the onions turn golden brown.
  • Add the garlic and sweet potato cubes. Cook, stirring occasionally, for 5-7 minutes or until the sweet potato begins to soften.
  • Add the turmeric, ground ginger, salt, and pepper. Cook for another 2 minutes to allow the spices to release their flavors.
  • Add the basmati rice and stir to coat it in the spices and vegetables.
  • Add 300 ml of water, bring to a boil, then reduce the heat to low. Cover and simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed.
  • Add the green peas and green beans to the pan, stirring gently to combine. Cook for another 5 minutes until the vegetables are tender but still vibrant.
  • Remove the pan from the heat, fluff the rice with a fork, and garnish with fresh coriander.
