Ingredients

  • 250 grams of fresh tuna
  • 200 grams of Attiéké (cassava couscous)
  • 1 medium onion, sliced
  • 2 medium tomatoes, diced
  • 1 small chili pepper, finely chopped
  • 2 grams of salt
  • 3 tablespoons of oil (for frying)
  • 1 tablespoon of olive oil
  • 1 tablespoon of fresh coriander, chopped
  • 1 teaspoon of ginger (ground)
  • 1 teaspoon of garlic powder

Method

  • Season the fresh tuna with salt, ginger, and garlic powder. Allow it to marinate for 10 minutes.
  • Heat the oil for frying in a pan over medium heat. Add the tuna and cook for 4 minutes on each side until nicely browned and cooked through. Remove and set aside.
  • In the same pan, add the sliced onion and cook until it is translucent. Add the diced tomatoes and chili pepper, cooking until the tomatoes begin to break down, and form a sauce.
  • In a separate dish, steam the Attiéké with 2 tablespoons of olive oil until it’s fluffy and hot.
  • Flake the cooked tuna and add it to the tomato mixture, and cook for a further 3 minutes, allowing the flavors to meld.
  • Serve the tuna and tomato mixture over the steamed Attiéké, garnishing with fresh coriander.

Tips

To enhance the dish’s flavors, allow the tuna to marinate for a longer time in the fridge. Adjust the level of chili to your heat preference. Attiéké should be light and fluffy, so be generous with oil and steam it gently for the best texture.
