Ingredients

  • 100 grams Cornmeal (maize flour)
  • 400 ml Water
  • 5 grams Salt
  • 5 grams Butter
  • 2 grams Chili Powder
  • 2 grams Ground Ginger
  • 2 grams Garlic Powder
  • 2 grams Coriander

Method

  • In a medium saucepan, bring 300 ml of water to a boil. Add the salt to the water and let it dissolve.
  • In a small bowl, mix the cornmeal with the remaining 100 ml of water to form a smooth paste.
  • Reduce the heat to medium, and slowly add the cornmeal paste to the boiling water, stirring constantly to prevent lumps.
  • Continue stirring for about 5 minutes until the mixture starts to thicken.
  • Add the butter, chili powder, ground ginger, garlic powder, and coriander, stirring to combine and to let the flavors merge.
  • Reduce the heat to low and let it simmer, stirring occasionally, until the mixture pulls away from the sides of the saucepan, about 5-10 minutes.
  • Remove from heat and let it cool for a few minutes before serving.
  • Shape the Ugali with a serving spoon and enjoy it warm.
