Ingredients

  • 200 grams of spinach
  • 2 tablespoons of palm oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 3 medium tomatoes, chopped
  • 100 grams of smoked fish, flaked
  • 100 grams of ground peanuts
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of thyme
  • 1 bay leaf
  • 500 ml of water

Method

  • Heat the palm oil in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and fragrant.
  • Add the chopped tomatoes and cook until they are soft and the oil starts to separate from the tomatoes.
  • Stir in the ground peanuts, flaked smoked fish, and thyme. Add the spinach and cook until they are wilted.
  • Add the water and bay leaf, and bring to a simmer.
  • Reduce the heat to low, cover, and let simmer for 30 minutes, stirring occasionally to prevent sticking.
  • Season with salt and black pepper to taste.
  • Remove the bay leaf, and serve the stew hot with a side of rice or your choice of accompaniment.
