Ingredients

  • 200 g fresh mozzarella cheese
  • 10 fresh basil leaves
  • 10 ml extra virgin olive oil for drizzling

Method

  • In a large mixing bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
  • Add the flour, salt, and 10 ml of extra virgin olive oil to the yeast mixture. Mix until a dough forms.
  • Turn the dough onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
  • Preheat your oven to 250°C.
  • After the dough has risen, punch it down and divide it into two equal parts.
  • Roll out each part into a thin pizza crust, and place on a lightly oiled baking tray or pizza stone.
  • Spread the fresh tomatoes or tomato sauce evenly over each crust.
  • Tear the mozzarella cheese into chunks and distribute evenly over the pizza.
  • Add fresh basil leaves on top.
  • Drizzle with extra virgin olive oil.
  • Bake in the preheated oven for about 10-12 minutes or until the crust is golden and the cheese is bubbly and lightly browned.
  • Remove from the oven and let it cool for a couple of minutes before serving.

Tips

  • Use a pizza stone if available to achieve a crispier crust.
  • For a sweeter sauce, you can lightly roast the tomatoes before blending into a sauce.
