Ingredients

- 200 g fresh mozzarella cheese
- 10 fresh basil leaves
- 10 ml extra virgin olive oil for drizzling
Method
- In a large mixing bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
- Add the flour, salt, and 10 ml of extra virgin olive oil to the yeast mixture. Mix until a dough forms.
- Turn the dough onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Preheat your oven to 250°C.
- After the dough has risen, punch it down and divide it into two equal parts.
- Roll out each part into a thin pizza crust, and place on a lightly oiled baking tray or pizza stone.
- Spread the fresh tomatoes or tomato sauce evenly over each crust.
- Tear the mozzarella cheese into chunks and distribute evenly over the pizza.
- Add fresh basil leaves on top.
- Drizzle with extra virgin olive oil.
