Ingredients

  • 200 grams yellow split peas (dholl)
  • 200 grams all-purpose flour
  • 2 grams turmeric
  • 2 grams cumin
  • 2 cloves garlic
  • 1 medium onion
  • 1 chili pepper
  • 3 grams salt
  • 30 ml oil (for cooking)
  • 100 ml water (for the dough)
  • 2 grams coriander (for garnish)
  • 2 grams chili powder
  • 2 ml vinegar

Method

  • Rinse the yellow split peas thoroughly, then soak them in water for a minimum of 2 hours. Drain well.
  • Grind the soaked split peas with the turmeric, cumin, garlic, and a teaspoon of salt to a fine paste.
  • To prepare the dough for the flatbread, mix the all-purpose flour, water, a pinch of salt, and 10 ml of oil in a bowl. Knead into a smooth dough and rest for 30 minutes.
  • In a pan, heat 10 ml of oil and sauté the onion and chili pepper until golden. Add the split pea paste and chili powder, cooking until the spices are aromatic.
  • Roll the dough into balls, then flatten and fill with the spicy pea mixture. Fold and seal well.
  • Heat 10 ml of oil on a skillet over medium heat. Cook the filled puris until golden and lightly crispy on both sides.
  • Before serving, drizzle a touch of vinegar and garnish with fresh coriander.
