Serves: 2, Difficulty: Expert

Preparation Time: 30 minutes, Cooking Time: 1 hour

Ingredients

  • 200 grams Potatoes
  • 200 grams Cornmeal
  • 100 grams Montenegrin cheese
  • 50 grams Butter
  • 200 ml Milk
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Oregano
  • 1 teaspoon Fresh Parsley, chopped

Method

  • Preheat the oven to 180°C. Peel and cube the potatoes. Toss with olive oil, a pinch of salt, and pepper, and spread on a baking tray. Roast for 25-30 minutes or until golden and tender.
  • In a large pot, bring 600 ml of water to a boil with a pinch of salt. Gradually whisk in the cornmeal, reducing the heat to a simmer. Stir consistently to prevent lumps, letting the mixture cook for 25 minutes until creamy.
  • Slowly add in the butter and Montenegrin cheese to the polenta, stirring until melted and smooth.
  • In a small pot, heat the milk and gradually stir it into the polenta for a creamy texture. Season with salt and pepper to taste.
  • Take the roasted potatoes and toss them in a mixture of butter, chopped parsley, and oregano.
  • Serve the creamy polenta topped with the herb-infused potatoes and an extra sprinkle of cheese and parsley for garnish.

Tips

  • For an extra creamy polenta, add more milk or a dash of cream.
  • Adjust the seasoning to taste, and feel free to incorporate more herbs for an enhanced aromatic profile.
