Ingredients

  • 200 grams of mushrooms (roughly chopped)
  • 200 grams of potatoes (diced)
  • 2 medium tomatoes (quartered)
  • 1 can (400 grams) of baked beans
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of chopped parsley (for garnish)

Method

  • Preheat your oven to 200 degrees Celsius.
  • Place the diced potatoes in a baking tray, drizzle with 1 tablespoon of olive oil, and sprinkle with thyme, rosemary, paprika, salt, and pepper. Toss to coat the potatoes evenly.
  • Roast the potatoes in the oven for 25-30 minutes or until they are golden and crispy, flipping halfway through.

  • Once everything is cooked, distribute the potatoes, mushrooms, and tomatoes evenly onto two plates.
  • Pour the baked beans over the vegetables and garnish with freshly chopped parsley.
