Serves: 2, Difficulty: Easy

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 150 grams dried lentils
  • 150 grams Basmati rice
  • 30 grams ghee
  • 2 cloves of garlic, minced
  • 10 grams ginger, finely chopped
  • 1 green chili, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 500 ml water
  • 10 grams coriander, chopped (for garnish)

Method

  • Rinse the lentils and Basmati rice separately under cold water.
  • In a pot, melt ghee over medium heat. Add cumin and coriander seeds, and sauté for a minute.
  • Stir in ginger, garlic, and green chili, and cook until aromatic.
  • Add turmeric and salt, combine well, and then add the lentils and 500 ml water.
  • Bring to a boil, then reduce the heat and let it simmer for about 20 minutes until lentils are tender.
  • In a separate pot, cook Basmati rice in salted water until just tender. Drain and set aside.
  • Once the lentils are cooked, fluff the Basmati rice and serve the lentil curry over it, garnished with chopped coriander.

Tips

  • For an added zing, add a squeeze of lemon just before serving.
  • For a more aromatic experience, lightly toast the rice before boiling it.
  • Adjust green chili to taste for varying heat levels.
