Ingredients

  • 800g Braising steak
  • 2 Onions (approximately 200g total)
  • 4 Carrots (approximately 400g total)
  • 4 Potatoes (approximately 800g total)
  • 200g Mushrooms
  • 200g Baked beans
  • 200g Bacon
  • 200g Broccoli
  • 2g Salt
  • 2g Black pepper
  • 2g Dried thyme
  • 2g Dried rosemary
  • 200ml Beef Stock (made with stock cubes)
  • 2 tbsp Olive oil
  • 2 Bay leaves

Method

  • Preheat your oven to 160°C.
  • In a large oven-proof pot, heat the olive oil over medium-high heat.
  • Season the braising steak with salt and pepper, then brown the meat on all sides.
  • Remove the steak and set aside. In the same pot, add the chopped onions, carrots, and potatoes. Sauté for 5 minutes.
  • Add the mushrooms, bacon (cut into small pieces), thyme, rosemary, and bay leaves. Cook for an additional 5 minutes.
  • Return the braising steak to the pot, add the baked beans and beef stock.
  • Bring the mixture to a simmer, then cover with a lid and transfer to the oven.
  • Let the stew braise in the oven for 2.5 hours, or until the meat is tender.
  • In the last 15 minutes of cooking, add the chopped broccoli.
  • Remove the bay leaves before serving.

Tips

  • For a richer flavor, marinate the braising steak in the herbs and olive oil for a few hours before cooking.
  • Serve the stew with a side of warm, crusty bread to soak up the delicious broth.
  • For a thicker stew, mix 2 tbsp of cornflour with a small amount of water and stir into the stew 10 minutes before the cooking time is complete.
