Ingredients

  • 200g beef, minced
  • 200g potatoes, peeled and diced
  • 2 eggs
  • 100g carrots, finely grated
  • 1 packet of brown sauce, 25g
  • 15ml olive oil
  • 2g salt
  • 1g black pepper
  • 2g fresh parsley, chopped

  • In a medium-sized frying pan, heat the olive oil over medium heat. Add the minced beef, and cook until browned, about 5-7 minutes, stirring occasionally.
  • In a separate pot, boil the diced potatoes until just tender, about 10 minutes, then drain and set aside.
  • In a large bowl, whisk the eggs with salt, pepper, parsley, and thyme. Add the grated carrots and mix well.
  • Combine the browned beef and boiled potatoes with the egg mixture.
  • In the same pan, add the beef and potato mixture and cook over medium heat until golden brown and set, about 10 minutes.
  • In a separate saucepan, prepare the brown sauce according to the packet instructions, using 100ml of water. Add chopped parsley for a fresh touch.
  • Serve the frittatas drizzled with the herbed jus.

Tips

  • For a crisp finish, broil the frittatas for a few minutes after pan-cooking.
  • Adjust the seasoning to taste, and garnish with extra parsley for color and flavor.
