Pineapple-Glazed Gammon with Cheesy Garlic Chips and Peas

Delight in a harmonious blend of sweet and savory with our Pineapple-Glazed Gammon paired with Cheesy Garlic Chips and a hearty serving of Peas. This dish takes inspiration from traditional English cuisine and elevates it with a modern twist. The sweet tang of pineapple cuts through the savory richness of the gammon, complemented perfectly by the cheesy, garlic-infused chips. This is a comforting meal with a burst of flavor in every bite!

Ingredients

  • 150g gammon
  • 100g chips
  • 2 pineapple rings
  • 100g peas
  • 50g Cheddar cheese, grated
  • 50g plain flour
  • 100ml soya milk
  • 2g salt
  • 2g pepper
  • 2g garlic powder
  • 2g paprika
  • 10ml olive oil
  • 5ml Worcestershire sauce

Method

  • Preheat the oven to 200°C.
  • On a baking tray, drizzle the chips with olive oil, garlic powder, salt, and pepper. Toss to coat evenly and spread them out in a single layer. Bake in the oven for 20-25 minutes, flipping halfway through for even crisping.
  • Heat a non-stick pan over medium heat. Add the gammon and cook for about 5-6 minutes on each side, or until it is browned and cooked through.
  • In a small saucepan, warm the pineapple rings on medium heat until they become slightly caramelized, about 2-3 minutes on each side.
  • In the same pan used for the gammon, add flour and cook for 1-2 minutes to form a roux. Slowly whisk in the soya milk until the mixture thickens. Add the grated Cheddar cheese, paprika, and Worcestershire sauce. Stir until the cheese is melted and the sauce is smooth.
  • Once the chips are ready, drizzle the cheesy garlic sauce over them.
  • Boil or steam the peas until tender, about 3-5 minutes.
  • Serve the gammon with the caramelized pineapple rings on top, accompanied by the cheesy garlic chips and a side of peas.

Tips

  • For a crispier gammon, you can finish it off in the oven for 5 minutes.
  • For an extra cheesy flavor, you can add more grated Cheddar to the chips in the last 5 minutes of baking.
  • Garnish with a sprinkle of fresh herbs like thyme or rosemary for an added layer of flavor.
