  • 1 tablespoon almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon thyme, finely chopped
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • Pinch of sea salt

Method

  • Preheat the oven to 180°C. Prepare a baking dish by lightly greasing it with a small amount of almond butter.
  • In a saucepan, combine the rhubarb, sugar, and cinnamon. Cook over medium heat, stirring occasionally, until the rhubarb softens and releases its juices, about 10 minutes.
  • In the preheated baking dish, layer the cooked quinoa evenly.
  • Sprinkle the chopped chestnut over the quinoa, followed by a layer of peach slices.

  • Bake in the preheated oven for 20 minutes, until the top is set and the dessert is fragrant.
  • Allow to cool for a few minutes before serving.
