Ingredients

  • 2 parsnips, grated
  • 5 carrots, grated
  • 1 swede, grated
  • 150 grams of plain flour
  • 1 egg
  • 100 grams of butter
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • 2 teaspoons of Dijon mustard

Method

  • In a large bowl, combine the grated parsnips, carrots, and swede. Mix thoroughly.
  • Add the plain flour, egg, salt, pepper, thyme, rosemary, and Dijon mustard to the vegetables. Mix until the ingredients are evenly combined, forming a batter.
  • In a large pan, melt 50 grams of butter over medium heat. Once the butter is hot, drop spoonfuls of the batter into the pan, forming fritters.
  • Cook the fritters for about 4 minutes on each side, until golden brown and crisp. Remove and drain on a paper towel.
  • Repeat the cooking process with the remaining batter, adding more butter to the pan as needed.
  • Serve the fritters warm, possibly with a side of Dijon mustard for extra zing.
