Ingredients

  • 100 grams Rye flour
  • 50 grams All-purpose flour
  • 1.5 grams Salt
  • 200 ml Water
  • 100 grams Short-grain rice
  • 200 ml Milk
  • 2 Hard-boiled eggs
  • 50 grams Butter
  • 2 grams Dried Thyme
  • 2 grams Dried Rosemary
  • 2 grams Dried Parsley
  • 1 gram Black Pepper

Method

  • Combine the Rye flour, All-purpose flour, and 1 gram of Salt in a bowl. Gradually add 100 ml of Water to form a dough. Knead gently and set aside.
  • Boil the Short-grain rice in 100 ml of Water and 200 ml of Milk with 1 gram of Salt. Cook on low heat until the rice is soft and the mixture is creamy.
  • Once the rice mixture is ready, stir in 10 grams of Butter, and season with Black Pepper, Thyme, and Rosemary.
  • Roll the dough into small flat rounds. Fill the center with the creamy rice mixture and form small pies, ensuring the rice is enclosed with the dough.
  • Place the pies on a baking tray and bake in a preheated oven at 200°C for 15 minutes until the dough is crisp and lightly golden.
  • While baking, mash the Hard-boiled eggs with 40 grams of Butter and a pinch of Salt. This will be the topping.
  • Once the pies are golden, top with the egg and butter mixture, and a sprinkle of Parsley.
  • Serve warm, and enjoy the wholesome flavors of this Finnish delicacy.
