Ingredients

  • 180 grams Rye flour
  • 4 grams Salt
  • 2 Salmon fillets, approximately 150 grams each
  • 3 grams Black pepper
  • 2 grams Dried Thyme
  • 2 grams Dried Rosemary
  • 2 grams Chives, finely chopped
  • 3 grams Garlic Powder
  • 20 ml Olive Oil
  • 70 ml Water

Method

  • Preheat the oven to 180°C.
  • In a bowl, combine the rye flour, salt, and 2 grams of black pepper.
  • Gradually add the water and mix to form a malleable dough. Set aside to rest.
  • In a separate bowl, mix the remaining black pepper, dried thyme, dried rosemary, chives, and garlic powder.
  • Brush the salmon fillets with olive oil and coat them with the herb and spice mixture.
  • Roll out the dough into two rectangles. The dough should be large enough to encase each salmon fillet.
  • Place a salmon fillet in the center of each dough rectangle, then encase the salmon completely, sealing the edges.
  • Place the wrapped salmon fillets on a baking sheet and bake in the oven for 20-25 minutes, or until the crust is golden and the salmon is cooked through.

Tips

  • For an added touch, brush the rye crust with olive oil before baking for a more golden, crispy finish.
