Ingredients

  • 1 Quorn sausage
  • 100 grams of mushrooms, sliced
  • 1 onion, sliced
  • 1 medium potato, peeled and diced
  • 20 grams of lactose-free butter
  • 200 ml of vegetarian gravy
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • 1 tsp of dried parsley
  • 1 tsp of olive oil

Method

  • Start by cooking the Quorn sausage in a pan with olive oil over medium heat until golden brown. Set it aside and let it cool.
  • In the same pan, add the lactose-free butter and sliced onion. Cook until the onion is soft and golden brown, then add the mushrooms. Cook for another 5-7 minutes until the mushrooms are tender.
  • In a pot, add the diced potatoes and cover them with water. Bring to a boil, then simmer until the potatoes are tender. Drain and set aside.
  • Prepare the vegetarian gravy according to the instructions. Add thyme, rosemary, and parsley to the gravy for enhanced flavor.
  • Once the sausage is cool, cut it into bite-sized pieces and add them to the onion and mushroom mixture.
  • In a large bowl, combine the potato, sausage, mushroom, and onion mixture. Add a little bit of the gravy to bind the mixture.
  • Form the mixture into small dumplings and place them in a baking dish. Pour the remaining gravy over the dumplings.
  • Bake in a preheated oven at 180°C for 20-25 minutes, until the top is golden and the gravy is bubbling.

Tips

  • For a bit of heat, add a pinch of chili powder to the dumpling mixture.
  • Garnish with fresh parsley for a fresh and vibrant touch.
