Pork Sausage and Onion Gravy with Creamy Mashed Potatoes

Ingredients

  • 4 pork sausages
  • 500 grams potatoes
  • 50 grams butter
  • 100 ml milk
  • 2 onions
  • 500 ml beef stock
  • 2 tablespoons plain flour
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon thyme

Method

  • Peel and chop the potatoes, and boil them in salted water for 15-20 minutes until tender.
  • While the potatoes are boiling, heat 1 tablespoon of olive oil in a pan over medium heat and cook the sausages until browned and cooked through, approximately 15 minutes. Remove and set aside.
  • Thinly slice the onions and add them to the pan where the sausages were cooked. Cook over medium heat until caramelized, about 10 minutes.
  • Sprinkle the plain flour over the onions and stir until the flour coats the onions and starts to turn golden, about 2 minutes.
  • Slowly add the beef stock to the pan, stirring continuously to avoid lumps. Add the thyme and Dijon mustard, and let the gravy simmer until it thickens, about 10 minutes. Season with salt and pepper to taste.
  • Drain the potatoes and mash them with 50 grams of butter and 100 ml of milk until creamy. Season to taste with salt and pepper.
  • Serve the sausages over the mashed potatoes and generously top with the onion gravy.

  • For an extra creamy mash, warm the milk before adding it to the potatoes.
