Vegetarian Leek and Mushroom Pasties

Ingredients

  • 1 Leek, finely sliced (approx. 100 grams)
  • 200 grams of Mushrooms, finely chopped
  • 1 Baguette, sliced in half
  • 2 grams of Ginger (Ground)
  • 2 grams of Cumin
  • 2 grams of Salt
  • 2 grams of Pepper
  • 2 tablespoons of Olive Oil (approx. 30 ml)
  • 1 Sweet Potato, peeled and chopped (approx. 200 grams)
  • 2 grams of Chives, chopped

Method

  • Preheat the oven to 200°C.
  • In a pan, heat 1 tablespoon (approx. 15 ml) of Olive Oil and sauté the finely sliced Leek and chopped Mushrooms until softened.
  • Add the Ginger, Cumin, Salt, and Pepper to the sautéed Leek and Mushrooms, and cook for an additional 2 minutes until the spices are aromatic.
  • Slice the Baguette in half and hollow out a portion of the bread to create a space for the filling.
  • Stuff the hollowed Baguette halves with the Leek and Mushroom mixture and press them together to form a ‘pasty’ shape.
  • Brush the outside of the Baguette with Olive Oil and place them on a baking sheet.
  • Bake in the preheated oven for 15 minutes, or until the Baguette is crispy and golden.
  • Meanwhile, in a pot of boiling water, cook the peeled and chopped Sweet Potato until tender, about 10 minutes.
  • Drain the Sweet Potato and mash with a tablespoon of Olive Oil (approx. 15 ml) and chopped Chives.
  • Serve the Leek and Mushroom Pasties with a side of Sweet Potato mash.

  • Ensure the Leek and Mushroom mixture is well combined and flavors are blended properly.
  • For an extra crispy pasty, lightly toast the baguette halves before stuffing.
  • Add a touch of fresh ground nutmeg into the sweet potato mash for extra warmth.
