Ingredients
- 1 Leek, finely sliced (approx. 100 grams)
- 200 grams of Mushrooms, finely chopped
- 1 Baguette, sliced in half
- 2 grams of Ginger (Ground)
- 2 grams of Cumin
- 2 grams of Salt
- 2 grams of Pepper
- 2 tablespoons of Olive Oil (approx. 30 ml)
- 1 Sweet Potato, peeled and chopped (approx. 200 grams)
- 2 grams of Chives, chopped
Method
- Preheat the oven to 200°C.
- In a pan, heat 1 tablespoon (approx. 15 ml) of Olive Oil and sauté the finely sliced Leek and chopped Mushrooms until softened.
- Add the Ginger, Cumin, Salt, and Pepper to the sautéed Leek and Mushrooms, and cook for an additional 2 minutes until the spices are aromatic.
- Slice the Baguette in half and hollow out a portion of the bread to create a space for the filling.
- Stuff the hollowed Baguette halves with the Leek and Mushroom mixture and press them together to form a ‘pasty’ shape.
- Brush the outside of the Baguette with Olive Oil and place them on a baking sheet.
- Bake in the preheated oven for 15 minutes, or until the Baguette is crispy and golden.
- Meanwhile, in a pot of boiling water, cook the peeled and chopped Sweet Potato until tender, about 10 minutes.
- Drain the Sweet Potato and mash with a tablespoon of Olive Oil (approx. 15 ml) and chopped Chives.
- Serve the Leek and Mushroom Pasties with a side of Sweet Potato mash.
