Ingredients
- 400 grams minced lamb
- 4 slices of white bread
- 2 potatoes, peeled and cubed
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 20 grams curry powder
- 4 cloves garlic, minced
- 20 grams fresh ginger, minced
- 10 grams ground cumin
- 10 grams ground coriander
- 10 grams chili powder
- 10 grams salt
- 5 grams ground pepper
- 50 ml white vinegar
- 50 ml olive oil
- 200 ml water
Method
- Preheat your oven to 180°C.
- Soak the white bread slices in water, then squeeze out the excess water and set the bread aside.
- In a large pan, heat olive oil over medium heat. Add the finely chopped onions and sauté until they are translucent.
- Stir in the minced garlic, ginger, curry powder, ground cumin, ground coriander, and chili powder. Cook for another 2 minutes until the spices are aromatic.
- Add the minced lamb to the pan, breaking it up with a spoon, and cook until it is browned.
- Incorporate the chopped tomatoes, soaked bread, salt, and pepper. Allow the mixture to cook for 10 minutes, stirring occasionally, until it is well blended.
- Pour the mixture into an oven-safe dish and bake for 30 minutes.
- In another pan, heat a little olive oil and add the cubed potatoes. Sauté for 5 minutes.
- Add the curry powder and a pinch of salt to the potatoes, and stir well. Pour in 200 ml of water and white vinegar, and cook until potatoes are tender and the water has evaporated.
- Serve the Bobotie with the curried potatoes on the side, garnished with fresh coriander if desired.
