Ingredients

  • 200 grams of leftover rice
  • 200 grams of tofu, diced
  • 200 grams of broccoli, chopped into florets
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of sriracha
  • 2 tablespoons of vinegar
  • Salt and pepper to taste

Method

  • Heat the vegetable oil in a large pan or wok over medium heat.
  • Once the oil is hot, add the diced tofu. Sauté for about 5 minutes, or until the tofu is golden brown. Remove and set aside.
  • In the same pan, add broccoli florets and a splash of water. Sauté until the broccoli is vibrant and tender, about 5 minutes.
  • Return the tofu to the pan and add the leftover rice. Toss to combine.
  • In a small bowl, whisk together soy sauce, sriracha, and vinegar. Pour the sauce over the tofu, broccoli, and rice, mixing well to coat.
  • Cook for another 3 minutes, or until the dish is heated through and the flavors have melded.
  • Sprinkle with sesame seeds and add salt and pepper to taste. Serve hot.

Tips

  • Ensure the tofu is well-pressed to remove excess moisture. This helps it to brown beautifully.
  • For a richer flavor, marinate tofu in a small amount of soy sauce and vinegar for 10 minutes before cooking.
  • Garnish with chopped fresh herbs or a squeeze of lime for an extra layer of flavor.
