South African Bobotie with Custard Topping

Ingredients
- 500g ground beef or lamb
- 1 large onion, chopped
- 2 slices white bread, soaked in 125ml milk
- 1 tbsp curry powder
- 2 tbsp apricot jam
- 1 tbsp vinegar
- 1/4 cup (40g) raisins
- 2 eggs
- 125ml milk (for custard topping)
- 2 bay leaves
- Salt and pepper to taste
- Chutney (for serving)
Method
- Preheat your oven to 180°C (350°F).
- In a large frying pan, cook the ground beef or lamb with the chopped onion until the meat is browned and the onion is translucent.
- Squeeze the milk from the soaked bread and add the bread to the meat mixture, discarding the milk.
- Add the curry powder, apricot jam, vinegar, raisins, salt, and pepper to the meat mixture. Mix well and cook for another 2 minutes.
- Transfer the mixture to a baking dish and smooth the top.
- In a small bowl, beat the eggs with the 125ml milk for the custard topping. Pour this mixture over the meat mixture in the baking dish.
- Place the bay leaves on top.
- Bake for 30-40 minutes, or until the custard is set and golden.
- Serve with a side of chutney.

- For a more golden custard top, you can add a teaspoon of turmeric to the egg mixture.
