Ingredients

  • 150g beef, thinly sliced
  • 100g green beans, trimmed and halved
  • 1 medium tomato, chopped (approximately 150g)
  • 1 medium green pepper, sliced (approximately 100g)
  • 100g cooked rice (white, brown, or basmati)
  • 1 tablespoon olive oil (approximately 15ml)
  • 1 teaspoon ground cumin (approximately 3g)
  • 1 teaspoon dried oregano (approximately 1g)
  • 1 teaspoon paprika (approximately 3g)
  • 1 clove of garlic, minced (approximately 3g)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Method

  • In a large pan or wok, heat the olive oil over medium-high heat.
  • Once the oil is hot, add the thinly sliced beef and stir-fry for 3-5 minutes, or until browned and cooked through. Remove the beef from the pan and set aside.
  • In the same pan, add the minced garlic and stir for about 1 minute, until fragrant.
  • Add the green beans and sliced green pepper to the pan. Stir-fry for 5-7 minutes, or until the vegetables are tender but still crisp.
  • Return the cooked beef to the pan and add the chopped tomato. Stir to combine.
  • Sprinkle the cumin, oregano, and paprika over the beef and vegetables. Stir well to coat everything evenly with the spices.
  • Season with salt and freshly ground black pepper to taste.
  • Continue to cook for another 3-5 minutes, until everything is well combined and the tomatoes are slightly softened.
  • Serve the stir-fry over cooked rice.
