Ingredients
- 300 grams Chicken, boneless and skinless
- 200 ml Coconut milk
- 150 grams Jasmine rice
- 15 Curry leaves
- 1 Onion, finely sliced
- 3 cloves of Garlic, minced
- 1 small piece (about 20 grams) of Ginger, minced
- 2 Green chilies, sliced
- 1 teaspoon Turmeric
- 1 teaspoon Salt
- 1 teaspoon Coriander
- 1 teaspoon Cinnamon
- 1 tablespoon Olive Oil
- 200 ml Water
Method
- Start by washing the Jasmine rice in cold water and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onion, and cook until they become translucent.
- Stir in the minced garlic and ginger, and cook for an additional 2 minutes to release the flavors.
- Add the sliced chilies and cook for another minute.
- Include the boneless chicken, and sauté until the chicken pieces are lightly browned.
- Stir in the curry leaves, turmeric, salt, coriander, and cinnamon to evenly coat the chicken.
- Pour in the coconut milk and water, and bring to a gentle simmer.
- Cover the skillet, and allow the chicken to cook through over a low heat for about 20 minutes, stirring occasionally.
- While the chicken curry is simmering, cook the Jasmine rice according to the package instructions.
