Serves: 2, Difficulty: Expert
Preparation time: 45 minutes, Cooking time: 20 minutes
Ingredients
- 130 g dark chocolate bar
- 130 g digestive biscuits
- 50 g butter
- 2 eggs
- 200 g black cherries
- 100 g raspberries
- 100 g strawberries
- 100 g blackberries
- 50 g sugar
- 200 g whipping cream
- 50 g flour
- 50 g bar of white chocolate
- 1 tsp vanilla extract
- 1 tsp cinnamon
Method
- Start by preparing the chocolate crust: melt the butter and crush the digestive biscuits into fine crumbs. Combine the butter and crumbs, pressing the mixture into the base of a 20cm tart pan. Refrigerate for 10 minutes.
- Break the dark chocolate into small pieces and melt it gently in a double boiler. Let it cool slightly.
- In a bowl, whisk the eggs and 50 g of sugar until pale and fluffy. Slowly fold in the melted dark chocolate and 50 g flour until fully incorporated.
- Pour the chocolate mixture over the cooled crust, smoothing the top with a spatula. Bake in a preheated oven at 180°C for 20 minutes. Let it cool.
- In a bowl, whip the cream until soft peaks form. Add 1 tsp vanilla extract and 1 tsp cinnamon and whip to combine. Refrigerate.
- Wash and pat dry the black cherries, raspberries, strawberries, and blackberries. Hull and slice the strawberries.
- Once the chocolate tart has cooled, spread a generous layer of whipped cream over the top.
- Arrange the black cherries, raspberries, strawberries, and blackberries artistically on the cream layer.
- Grate the bar of white chocolate over the berries for a fine, snowy finish.
Tips
- Ensure the chocolate is melted gently in a double boiler to prevent burning.
- Chill the tart thoroughly before slicing to achieve clean, firm pieces.
- Use fresh, seasonal berries for the best flavors and presentation.
