Ingredients

  • 130 g dark chocolate bar
  • 130 g digestive biscuits
  • 50 g butter
  • 2 eggs
  • 200 g black cherries
  • 100 g raspberries
  • 100 g strawberries
  • 100 g blackberries
  • 50 g sugar
  • 200 g whipping cream
  • 50 g flour
  • 50 g bar of white chocolate
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Method

  • Start by preparing the chocolate crust: melt the butter and crush the digestive biscuits into fine crumbs. Combine the butter and crumbs, pressing the mixture into the base of a 20cm tart pan. Refrigerate for 10 minutes.
  • Break the dark chocolate into small pieces and melt it gently in a double boiler. Let it cool slightly.
  • In a bowl, whisk the eggs and 50 g of sugar until pale and fluffy. Slowly fold in the melted dark chocolate and 50 g flour until fully incorporated.
  • Pour the chocolate mixture over the cooled crust, smoothing the top with a spatula. Bake in a preheated oven at 180°C for 20 minutes. Let it cool.
  • In a bowl, whip the cream until soft peaks form. Add 1 tsp vanilla extract and 1 tsp cinnamon and whip to combine. Refrigerate.
  • Wash and pat dry the black cherries, raspberries, strawberries, and blackberries. Hull and slice the strawberries.
  • Once the chocolate tart has cooled, spread a generous layer of whipped cream over the top.
  • Arrange the black cherries, raspberries, strawberries, and blackberries artistically on the cream layer.
  • Grate the bar of white chocolate over the berries for a fine, snowy finish.
