Serves: 2, Difficulty: Easy

Preparation Time: 15 minutes, Cooking Time: 20 minutes

Ingredients

  • 300g Chicken, thinly sliced
  • 50ml Soy sauce
  • 20ml Vinegar
  • 3 cloves Garlic, minced
  • 2 Bay leaves
  • 5g Black peppercorns, crushed
  • 2g Salt
  • 15ml Olive oil
  • 20g Basil leaves
  • 200g Jasmine Rice

Method

  • Rinse the jasmine rice under cold water, then cook it according to the package instructions. Set aside and keep warm.
  • In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Introduce the chicken slices to the pan, stir-frying until they start to brown on the edges.
  • Add the soy sauce, vinegar, crushed black peppercorns, and bay leaves, stirring to combine. Simmer for 5 minutes until the chicken is thoroughly cooked and flavors meld.
  • Remove the bay leaves and add basil leaves, stirring into the chicken until they wilt slightly.
  • Serve the Thai Basil Chicken over warm jasmine rice, garnished with extra basil leaves, if desired.

Tips

  • For an extra kick, add a tablespoon of sliced chili peppers to the garlic for sautéing.
  • Allow the sauce to slightly reduce for a richer and more intense flavor.
