Ingredients

  • 200g stewing beef, cut into chunks
  • 50g bacon, chopped
  • 1 small onion, sliced
  • 1 small carrot, sliced
  • 1 clove garlic, minced
  • 50ml red wine
  • 50ml beef broth
  • 1 tsp tomato paste
  • 1 bay leaf
  • 1/4 tsp thyme
  • 50g mushrooms, quartered
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 1 tsp soy sauce
  • 1 tsp Sriracha

Method

  1. Heat a small pot over medium heat. Add the chopped bacon and cook until crisp. Remove and set aside.
  2. In the same pot, add the stewing beef chunks and brown on all sides.
  3. Add the sliced onion, sliced carrot, and minced garlic to the pot. Sauté until the onion is translucent.
  4. Pour in the red wine and beef broth, scraping the bottom of the pot to deglaze.
  5. Stir in the tomato paste, bay leaf, thyme, soy sauce, and Sriracha.
  6. Add the quartered mushrooms and bring the mixture to a simmer.
  7. Cover the pot and let it simmer gently for approximately 1 hour, until the beef is tender.
  8. Season with salt and pepper to taste.
  9. Before serving, garnish with the cooked bacon and fresh parsley.

Tips

  • For a milder spice level, reduce the amount of Sriracha.
  • You can add a splash of lime juice before serving to add a hint of tanginess.
  • Serve with a side of jasmine rice for a more filling meal.
