- 100 grams snow peas, ends trimmed and halved
- 1 tablespoon lemon peel, finely grated
- 50 grams unsalted peanuts, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon peanut butter
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
- 1 tablespoon fresh coriander, chopped
- 1 teaspoon ground ginger
- 1 teaspoon ground chili powder
- 2 garlic cloves, minced
- Salt and pepper to taste
Method
- Heat the olive oil in a medium skillet over medium heat. Add the garlic and ginger, sauté until fragrant, about 1 minute.
- Add the diced eggplant and tofu to the skillet. Cook, stirring occasionally, until the eggplant is tender and the tofu is lightly browned, about 8 minutes.
