Ingredients
- 200g rice noodles
- 200g shrimp
- 2 eggs
- 3 tbsp fish sauce
- 2 tbsp tamarind paste
- 2 tbsp sugar
- 1 lime, cut into wedges
- 2 cloves garlic, minced
- 1 cup bean sprouts
- 1/4 cup peanuts, crushed
- 1-2 fresh chilies, chopped
- Fresh coriander for garnish
- 2 tbsp olive oil
Method
- Soak the rice noodles in warm water for 20-30 minutes, or until softened. Drain and set aside.
- In a small bowl, mix the tamarind paste, fish sauce, and sugar until the sugar is dissolved.
- Heat 1 tbsp of olive oil in a large pan or wok over medium-high heat. Add the minced garlic and chopped chilies, and stir-fry for 1-2 minutes until fragrant.
- Add the shrimp to the pan and cook for 3-4 minutes until pink and cooked through. Remove the shrimp from the pan and set aside.
- In the same pan, heat the remaining olive oil. Add the softened rice noodles and the tamarind sauce mixture, and stir to coat the noodles.
- Push the noodles to one side of the pan and crack the eggs into the empty side. Scramble the eggs until cooked through, then mix with the noodles.
- Add the cooked shrimp, bean sprouts, and crushed peanuts to the pan. Toss to combine all the ingredients.
