Ingredients

  • 200 grams of cornmeal
  • 2 tomatoes, chopped
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 50 ml of palm oil
  • 1 teaspoon of chopped chili pepper
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 5 grams of fresh coriander, chopped
  • 5 grams of fresh parsley, chopped
  • 50 ml of canned tomatoes
  • 1 teaspoon of curry powder

Method

  • Heat the palm oil in a large saucepan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  • Add the chopped tomatoes, canned tomatoes, chili pepper, salt, black pepper, paprika, and curry powder to the saucepan. Stir to blend the ingredients, and allow the sauce to simmer until the tomatoes are tender, about 15 minutes.
  • In a separate saucepan, bring 500 ml of water to a boil. Gradually add the cornmeal, stirring continuously to prevent lumps. Lower the heat and allow the cornmeal to cook and thicken, stirring occasionally, until it reaches a smooth, creamy consistency, about 15 minutes.
  • Once the cornmeal is cooked, blend the sauce into it, stirring until evenly combined. Allow the flavors to meld over low heat for a few minutes.
  • Garnish with fresh coriander and parsley. Serve hot, and enjoy your Togolese Fusion Delight.
