Serves: 2, Difficulty: Expert

Preparation Time: 20 minutes, Cooking Time: 60 minutes

Ingredients

  • 300g lamb, cut into bite-sized pieces
  • 3 cloves of garlic, minced
  • 20g butter
  • 150g basmati rice
  • 150g yogurt
  • 2 eggs
  • 80g plain flour
  • 5g salt
  • 3g black pepper
  • 5g oregano
  • 500ml water

Method

  • In a thick-bottomed pot, melt the butter over medium heat. Add the minced garlic and sauté until golden.
  • Add the lamb pieces, salt, and black pepper. Brown the lamb evenly, ensuring a rich golden color.
  • Incorporate the basmati rice, stirring to coat the grains with the flavors of the lamb and garlic.
  • Slowly pour in the water and sprinkle oregano. Bring to a boil, then reduce the heat, cover, and let simmer for 20 minutes until the rice is cooked and fluffy.
  • In a separate bowl, whisk yogurt and eggs with a pinch of salt and pepper. Set aside.
  • Once the rice and lamb are cooked, transfer to a serving dish and drizzle the yogurt mixture over the top for a refreshing balance.
  • Dust with flour and allow to bake in a pre-heated oven at 180°C for 15 minutes to achieve a golden crust.

Tips

  • Use fresh lamb for the most authentic taste.
  • For a richer flavor, allow the lamb to simmer in the rice longer.
  • Use a thick-bottomed pot to prevent rice from sticking and burning.
