Ingredients

  • 400 gram potatoes, peeled and quartered
  • 200 gram kale, chopped
  • 200 gram carrots, peeled and sliced
  • 200 gram sauerkraut, drained
  • 2 smoked rookworst sausages
  • 50 gram butter
  • 100 ml milk
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon Dijon mustard

Method

  • Boil the potatoes in a large pot of salted water for 20 minutes, or until tender. Drain and set aside.
  • In a separate pot, boil the carrots until tender, approximately 15 minutes. Drain and set aside.
  • In the pot with the potatoes, add the drained carrots, kale, and sauerkraut.
  • Place the pot on low heat, add butter, and mash the vegetables until creamy. Gradually add milk, and stir until well mixed.
  • Season the mash with Dijon mustard, salt, and pepper to taste.
  • In a separate pan, cook the rookworst sausages over medium heat until browned and heated through, about 10 minutes.
  • Slice the rookworst and serve on top of the vegetable mash.
