Ingredients

  • 4 sausages
  • 4 rashers of bacon
  • 2 eggs
  • 4 slices of bread
  • 200 grams of baked beans
  • 200 grams of mushrooms, sliced
  • 1 avocado, sliced
  • 2 tomatoes, halved
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of parsley, chopped

Method

  • Preheat your oven to 180°C. Place the tomatoes, cut side up, on a baking tray. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 15-20 minutes.
  • In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the sausages and bacon, cooking until the sausages are browned and bacon is crispy. Set aside and keep warm.
  • In the same pan, add the mushrooms, cooking until softened and golden. Remove and keep warm.
  • Heat the baked beans in a saucepan over low heat until warmed through.
  • In the pan, add a touch of oil if needed, and fry the eggs to your desired level of doneness.
  • Toast the slices of bread to a golden brown.
  • Arrange each component on a plate: sausages, bacon, eggs, mushrooms, tomatoes, avocado slices, and baked beans. Sprinkle with parsley.
