Serves: 2, Difficulty: Intermediate

Preparation Time: 20 minutes, Cooking Time: 40 minutes

Ingredients

  • 100 grams rye flour
  • 100 grams all-purpose flour
  • 2 grams salt
  • 100 ml water
  • 100 grams short-grain rice
  • 200 ml milk
  • 2 hard-boiled eggs, chopped
  • 50 grams butter
  • 2 grams pepper
  • 2 grams chives, chopped
  • 2 grams parsley, chopped

Method

  • In a saucepan, combine the short-grain rice and milk. Cook over medium heat, stirring occasionally, until the rice is creamy and fully cooked. Set aside to cool slightly.
  • In a mixing bowl, combine rye flour, all-purpose flour, and salt. Add water and knead into a smooth dough.
  • Roll the dough into a thin sheet and cut into 8 oval shapes. Place a spoonful of the rice filling in the center of each oval.
  • Fold the dough edges over the filling to create a pastry shell, leaving the center open.
  • Preheat the oven to 200°C. Place pastries on a baking sheet lined with parchment paper and bake for 15 minutes until the crust is golden.
  • In a bowl, mix the chopped hard-boiled eggs with butter, pepper, chives, and parsley.
  • Once the pastries are baked, remove from the oven, and top with the herbed butter and egg mixture.

Tips

  • Ensure the rice filling is slightly cool before assembling to prevent the dough from becoming soggy.
  • For a richer flavor, allow the herbed butter to rest for 15 minutes before serving.
