Ingredients

  • 300 grams of lamb, diced
  • 1 onion, finely chopped
  • 300 grams of plain flour
  • 1 egg
  • 5 grams of salt
  • 2 grams of pepper
  • 5 grams of ground coriander
  • 30 grams of butter
  • Water, as needed

Method

  • In a mixing bowl, combine the flour, a pinch of salt, and a little water to form a dough. Knead until smooth and let it rest for 15 minutes.
  • In a separate bowl, mix the diced lamb with chopped onion, salt, pepper, and coriander.
  • Roll the dough out on a floured surface until it’s about 2mm thick. Cut the dough into squares of about 12×12 cm.
  • Place a spoonful of the lamb mixture into the center of each dough square. Fold the dough over the filling, sealing the edges to form a triangle or square shape.
  • Preheat your oven to 180°C. Line a baking tray with parchment paper and place the Samsa on the tray.
