  • 150 grams beef, thinly sliced
  • 100 grams rice noodles
  • 1 piece star anise
  • 1 cinnamon stick
  • 2 cloves
  • 20 grams fresh ginger, sliced
  • 15 ml fish sauce
  • 1 green onion, thinly sliced
  • 1 lime, cut into wedges
  • 10 grams fresh basil
  • 50 grams bean sprouts
  • Salt, to taste
  • Pepper, to taste
  • 10 ml soy sauce
  • 1 liter of water

Method

  • In a saucepan, bring the water to a boil. Add star anise, cinnamon stick, cloves, and ginger, and let it simmer for 15 minutes to infuse flavors.
  • Meanwhile, prepare the rice noodles according to the package instructions. Drain and set aside.
  • Remove spices and ginger from the broth. Add beef slices and fish sauce, and simmer for 5 minutes or until the beef is just cooked through.
  • Season the broth with soy sauce, salt, and pepper according to your taste.
  • In a serving bowl, place the cooked noodles, and top with beef and broth.
  • Garnish with green onion, bean sprouts, basil, and lime wedges. Serve hot.

Tips

  • For a deeper flavor, char the ginger and onion slightly before infusing them into the broth.
  • Adjust the seasoning of the broth to your taste with additional fish sauce or soy sauce.
  • For an extra kick, add a dash of Sriracha or your preferred chili sauce.
